Aubergine & Halloumi Mish-Mash

A simple, yet delicious staple dinner for winter months.

Serves 4

Ingredients

600g Aubergine, raw
330g Tomatoes, cherry, raw
200g Cheese, Halloumi
27g Coconut oil
16g Coriander leaves, fresh
6.3g Mustard seeds
3.8g Garam Masala

Instructions

Gently fry the mustard seeds in the coconut oil for a few minutes. Chop the Halloumi and add to the pan, stirring for a couple of minutes. Slice the Aubergine and add to the pan, cooking for a further few minutes. Add the Cherry Tomatoes, Garam Masala and Coriander and stir well. Stir regularly and simmer for 15 minutes or until the Aubergines have cooked.
